Wow, Week 2 of the Ultimate Reset went by super fast!! I honestly have no idea where the week went. It feels like I just started and all of a sudden it was over!
(And then I realized I hadn’t taken many photos. Boo.)
I did something different this week and that was to plan my week based on only a few of the recipes – especially those I knew I could make with what I had on hand (mostly). I totally fell in love with the Quinoa Lentil Pilaf and made that several times this week. It was great because I didn’t feel like I was wasting food by only using 1/4 or 1/2 of the pre-cooked lentils I found. Even with making it 3-4 times this week (between lunch & dinner), I still have some lentils left over.
Results so far: Down 5 lbs total and my “skinny” jeans are feeling loose! I forgot to take measurements before I started this, but I definitely feel leaner.
Week 3 should be a cakewalk …
