Yeah, I know how odd that sounds – squash on pizza?!?! But trust me on this … ok?
This is a recipe from Real Simple and it is super simple. The hardest part is roasting the squash. I roasted mine the night before when I was baking potatoes, so the oven was doing double duty. And then this meal was a snap to pull together.
Butternut squash pizza with sausage
adapted from Real Simple
1 small butternut squash, cubed & roasted (about 30 minutes at 350)
1 package refrigerated pizza dough
1 tbsp. olive oil
1 link Johnsonville Andouille sausage, sliced
1 small yellow squash, halved and sliced
1/4 yellow onion, sliced
1/2 cup ricotta cheese
Roast butternut squash at 350 for about 30 minutes if you haven’t done so already. (I like to bake mine ahead of time so it’s ready to go.)
Roll out refrigerated pizza dough onto greased pan. Brush with olive oil. Top with sausage, squash, onion and yellow squash (or any other ingredients you’d like). Dot with ricotta cheese.
Bake at 450 for about 20 minutes (0r according to your pizza dough directions).
Slice and serve immediately.
I love this recipe because it’s so super simple AND the roasted butternut squash gives it a slightly sweet taste. Try it out and let me know what you think!
