Deployment meal: Chicken with zucchini

I love the simplicity of this dish. I’ve had a lot of zucchini in my CSA boxes the last few weeks and, after finding three random chicken breasts in the freezer, this seemed perfect. It was, by far, one of the most delicious things I made with 5 ingredients or less. These are best the first day – they get a bit soggy during reheating – but it wouldn’t be difficult to whip up one at a time if needed.

Chicken with zucchini

2-3 chicken breasts
1 tbsp. garlic olive oil
1/2 cup Italian bread crumbs
1 small zucchini, shredded
1/4 cup shredded mozzarella cheese

Coat chicken breasts in oil and dip in bread crumbs. Place on baking sheet or in pan and bake at 350 for about 20 minutes. In the meantime, combine zucchini and cheese in small bowl. Top chicken with zucchini mix and return to oven for about 10 minutes. Serve immediately.
