There’s no appetizing way to photograph beans and rice, I’m convinced. So, I apologize for the “eh” photos.
This has been my ‘go-to’ meal on the Ultimate Reset when I’m not a big fan of the planned meal. I love that it’s super simple, can be customized in all kinds of ways and is filling and healthy – and cheap!
Basic beans & rice
Serves 1
1 cup cooked rice
1/2 cup cooked beans (my favorites are black or pinto)
1 tsp. olive oil
1/8 – 1/4 tsp. cumin
1/8 – 1/4 tsp. chili powder
add-ins (I like salsa, guacamole and corn with black beans)
I usually make 2-3 cups of rice at a time and then I can portion out 2-3 meals using a can of beans (there’s usually about 3 servings in a can of beans). This is a great quick option for lunches on the go and/or when money gets tight!
This is definitely one meal you can customize to make your own by adding anything you want – roasted asparagus, chicken breast, shrimp, peas, broccoli, etc. Be adventurous!
